Ingredients (4 servings)
- 2.2 lbs (1 kg) green cabbage, shredded
- 1 lb (450 g) ground beef
- 1/2 cup cooked rice
- 1 large yellow onion, chopped
- 2 cups (500 ml) beef broth or milk
- 2 tbsp dark syrup or molasses
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp butter (for frying)
Instructions
Crockpot / Slow Cooker Method:
- Melt the butter in a large skillet over medium-high heat. Sauté the shredded cabbage until it softens and begins to turn golden brown. Transfer to the slow cooker.
- In the same skillet, brown the ground beef and chopped onion. Season with salt and pepper.
- Add the beef mixture and cooked rice to the slow cooker with the cabbage.
- Pour in the beef broth and dark syrup, stirring everything to combine.
- Cover and cook on LOW for 4–6 hours or HIGH for 3–4 hours, until the cabbage is incredibly tender and the flavors have melded together.
Traditional Oven Method:
- Preheat your oven to 350°F (175°C).
- Follow steps 1–3 above, but transfer all ingredients into a greased baking dish instead of a slow cooker.
- Bake uncovered for 1 to 1.5 hours. If the top gets too dark, cover loosely with foil.
Serving
Serve hot with a side of lingonberry jam (or cranberry sauce) for the ultimate Nordic experience.
Pro Tips
- Caramelization: Don’t skip frying the cabbage in butter before slow-cooking. Getting some color on the cabbage gives the casserole its authentic, deep flavor.
- Syrup: The dark syrup is traditional in Finland and Sweden. It balances the savory beef and sweetens the cabbage perfectly.
FAQs
